Week 63 Recipe |
FRESH GREEN BEANS |
With garden season here, we are beginning to pick fresh vegetables. My wife remembered her mother preparing the beans from their garden in this manner, so I decided to share this old time recipe with you. |
TOOLS
• Cutting Board
• Knife
• Wooden Spoon
• Garlic press
• Large Skillet with lid |
|
INGREDIENTS
• 2 large handfuls of green beans, appx.
4 cups, with ends removed
• 1 cup red onions,chopped
• 4 slices of bacon, cut into pieces
• 2 or 3 cloves of garlic, minced
• 1 cup beef broth
• Sea Salt & Pepper |
|
PREPARATION: Place bacon pieces in large skillet over medium heat and cook until beginning to soften. If you don’t have much grease from the bacon, drizzle a little olive oil in the skillet. Put in onions, stirring mixture until onions begin to soften. Add the garlic and stir, cooking appx 3 minutes. Add the green beans, about 1/4 tsp sea salt and pepper to taste. Stir to coat the beans. Slowly add the beef broth to the mixture. Cover and reduce heat to a simmer. Cook until beans are tender, appx 25 to 30 minutes.
HINTS: These beans would go well with recipe 17, 19 or 40 that can be found in our archives. Hope you enjoy. |
