CREAMED
SPINACH WITH SPICED BREAD CRUMBS |

an alternative way to add a "green

INGREDIENTS: |
•
2 lbs fresh
spinach
•
8 tbsp butter
•
½ cup fresh
bread crumbs
•
1/4 tsp
paprika
•
salt &
pepper (to taste)
•
3 cloves
garlic, minced
•
1 large
shallot, minced
•
5 tbsp flour
•
1 ½ cup milk
•
1/3 cup sour
cream
•
1/4 cup
grated Parmesan
cheese
•
2 tbsp fresh
lemon juice
•
1/4 tsp
nutmeg (optional) |

PREPARATION:
Bring 4
qts of water to boil in saucepan;
add spinach and cook until wilted,
appx 2 minutes. Drain in colander
and pat dry. Set aside. Melt 3
tbsp butter in skillet over
medium-high heat. Add the bread
crumbs, paprika, salt &
pepper. Cook until golden brown,
appx 2 minutes. Set aside. Add
remaining butter to skillet. Add
garlic and shallot. Cook, stirring
until softened, appx 2 minutes.
Stir in the flour. Add the milk
and bring to a boil. Add the
spinach, sour cream, Parmesan,
juice, and nutmeg, stirring until
thickened, appx 5 minutes.
Transfer to baking dish, sprinkle
with bread crumbs. Bake at 350 deg
F appx 15 minutes. Serve warm. |
