CREAMY SCALLOPED POTATOES

Usually every family has someone who makes a great scalloped potato casserole. This recipe adds a little modern "flare" to an old family favorite.
TOOLS:
• Cutting Board
• Knife
• Small Saucepan
• 8 X 8 Baking Dish
• Whisk, optional
INGREDIENTS:
2 1/4 lbs small to medium red potatoes,
  thinly sliced
1 Green onion,chopped
1/4 cup grated Parmesan cheese
5 tbsp butter
1/4 cup all purpose flour
2 cups half/half
½ tsp paprika

PREPARATION:
Preheat to 350 degrees F. Spray baking dish with cooking spray or thin coat of butter. Place potatoes in baking dish. Sprinkle onions & cheese over the potatoes. In small saucepan, heat butter over medium heat until melted. Stir in flour to form a roux. Slowly stir in half/half until smooth. Pour white sauce over potatoes. Sprinkle on paprika. Bake appx 45 to 55 minutes or until potatoes are fork tender.

HINT: I use Hungarian paprika because I like its deep flavor of roasted pepper.
