APPLE CAKE |

This
recipe was submitted by Kathy in
Panama. Since I don't do much
baking, I recruited my wife and
granddaughters, Charisma (7) and
Abigail (4) to help. The cake was
very moist and a big hit with all
who had a piece, including the
girls. |

Cutting Board
Large wooden spoon
Knife
Apple slicer (optional)
Large mixing bowl
8x8x2" baking dish

INGREDIENTS: |
|
1 cup of vegetable
oil
2 cups sugar
2 eggs
4 cups of apples,
peeled & sliced
1 tsp vanilla
1 tsp salt
1 tsp baking powder
3 cups all purpose
flour
1 cup pecans, chopped
(optional)
Icing
1 cup confectioners
sugar
2 tsp milk
1 tsp vanilla
1 cup creme de cocoa
(optional)

PREPARATION: |
|
For the cake: Mix oil and sugar.
Blend in the eggs. Mix in the flour,
baking powder and salt, a little at
a time to blend well. Add the
vanilla and apples (and pecans). Mix
until the apples are covered. Spread
into an ungreased baking pan. Bake
for 45 minutes or until a toothpick
inserted into cake comes out clean.
For the icing: Mix the sugar, milk
and vanilla (and cocoa de creme, if
used). Spread over cake while it is
still warm.
HINTS: This cake batter is
very thick, about the consistency of
cookie dough, so dont let that fool
you. I did not use the pecans or
cocoa de creme in my recipe. |
