SPICY CHILI |

end of her recipe to chow down &
enjoy, which we did. This is a
thick, spicy chili and full of
flavor. While there are plenty of
ingredients, it is not difficult to
make and will probably serve 8 to 10
people. |

INGREDIENTS: |
A 3 medium onions,
chopped
A 3 tbsp olive oil
B 3 Serrano peppers,
seeded & diced
B 3 Jalapeno peppers,
seeded & diced
B 2 cups bell
peppers, chopped
(1 red & 1
orange)
B 5 tsp ground cumin
B 9 tbsp chili powder
C 1 ½ lbs chili meat
C 1 ½ lbs hamburger
meat
C 3 tsp garlic powder
C 2 tbsp hot pepper
sauce
C 2 tsp oregano
C 1 tbsp salt
C 1 tbsp black pepper
D 2 15oz cans chili
tomatoes
D 2 15oz cans tomato
sauce
D 2 cups beef broth
D 1 tsp cayenne
pepper
D 1 tsp chopped
bay leaves
D 2 tbsp
Worcestershire
D 1 12oz can of beer
E 3 or 4 15oz cans of
kidney beans

PREPARATION: |
In a
10" skillet over medium heat, mix
and cook the ingredients in section
A until onions are golden brown,
appx 5 minutes.
Add the ingredients from Section B
and cook together, appx 3 minutes.
In a chicken fryer over medium high
heat, cook all the ingredients in
Section C until meat is browned,
appx 8 to 10 minutes.
Combine all the ingredients from
Sections A, B & C together in a
large stock pot.
Add the ingredients in Section D to
the pot. Bring to a boil. Simmer on
low for 1½ hours.
Add the kidney beans in Section E to
the other ingredients and simmer
about 10 to 15 minutes. You can
smash some of the beans to increase
thickness to desired level.
Let cool while shredding cheddar
cheese for the chili, unwrap saltine
crackers then CHOW down. Enjoy.
HINTS: I chopped all my
veggies and measured out the
ingredients then sorted them
according to their Section. This
made it very easy to follow the
instructions. Also, my wife is not
fond of kidney beans so I replaced 2
cans of the kidney beans with great
northern beans. |
