PREPARATION:
Preheat
oven to 400 deg F. Spray baking
dish with cooking spray. Scatter
sweet potatoes, cauliflower and
broccoli in pan. In small
microwavable bowl, place butter,
maple syrup, salt and pepper.
Place in microwave until butter is
melted. Appx 1 minute. Pour over
vegetables. Stir to coat. Cook in
oven until tender, about 40
minutes, stirring halfway through.
HINTS: Keep the florets
pretty close to the same size to
assure that they will cook evenly.
I stirred the dish several times
as it cooled to coat the veggies
with the sauce. |
