GRILLED PORK TOSTADOS

INGREDIENTS:

1/4 cup olive oil
1 tsp salt
2 tsp ground cumin
½ tsp cayenne pepper
1 ½ lb boneless pork tenderloin
4 peppers (mixed), cut into large strips
1 onion, halved and cut into ½" thick
  slices
8 corn tortillas
1 ½ cups grated Mexican-blend cheese
l ettuce, salsa, chopped cilantro, and
  guacamole for garnish

PREPARATION: 

Preheat grill to medium. Combine oil, salt, cumin and cayenne. Brush on pork and vegetables. Grill pork, covered, for 15-20 minutes. Slice into thin strips. Grill vegetables, covered, for about 10 minutes, turning often. Grill tortillas for 30 seconds or until crisp.

Divide pork and vegetables among tortillas and sprinkle with cheese. Place tortillas on a grill rack, cheese side up and grill for 1 minute or until cheese melts. Serve with lettuce, salsa, cilantro and guacamole.
