BBQ SAUCE |

This is
not your typical BBQ sauce and it
works great with pork loin or pulled
pork. It adds a bit of sweetness.
For those who use pork for New
Years, this will give you a new
twist to an old tradition. |

INGREDIENTS: |
1/4 cup
vegetable oil
½ tsp cumin
seeds
½ tsp fennel
seeds
1 onion,
finely minced
2 tbsp minced
ginger
1 jalapeno
pepper
salt
2 large
mangos
½ cup fresh
lime juice
1/4 cup apple
cider vinegar
2 tbsp
molasses
1/4 cup
Worcestershire sauce |

PREPARATION:
Peel
mangos and puree in blender.
(Should have appx 2 cups).
In a large saucepan, warm the oil
over low heat until hot and
shimmering. Add the cumin and
fennel; they should splutter upon
contactbe careful. Once the
spluttering stops, add the onions,
ginger and jalapeno. Saute until
softened but not colored. Add the
rest of the ingredients. Simmer
about 5 mintues.
Taste and season with salt as
desired. Serve warm over pork. |
